👤 Correct Guest Status & Smarter Room Charging

- Guest status (Upcoming, Staying, Departed) is now calculated correctly
- Charging to room is only possible while the guest is actively staying
- Day spa guests can no longer be mistakenly charged to rooms from previous stays

The restaurant module received several workflow improvements designed for speed and clarity:
- Serial reservations (e.g. breakfast & dinner across multiple days) are now sorted chronologically
- Tables in reservation dropdowns are always sorted by table number (A–Z or ascending)
- Staff can select multiple tables without the dropdown closing
- Archived tables are no longer considered in booking engine availability
